Researchers compared the effects of eating an American diet (high in unhealthy vegetable fats, carbohydrates, and sugar) versus a Mediterranean diet (high in healthy fats, extra virgin olive oil, and low in sugar) in an animal model of stress in a six year study.
Results: versus animals eating an American diet, the animals on the Mediterranean diet had lower cortisol levels and more rapid recovery from stressful situations.
Additionally, the animals on the American diet gained more body fat, and developed insulin resistance and non-alcoholic fatty liver disease, while the animals on the Mediterranean diet did not, and instead saw a reduction in inflammatory triglyceride levels.
