Remember back, if you can, 60 or 70 years ago when meals were made of eggs, bacon, beef steak, cream, butter and lard along with vegetables and fruits, a time when heart disease was not the number one killer of Americans? It was fourth or fifth in terms of people dying. Cancer was eighth or ninth on the list of people dying. Today, heart disease is the number one cause of people dying in America and cancer is number two, even after all the precautions of eating a low fat diet, avoiding animal fats, red meat, eggs and cholesterol. These precautions were advised by scientists, nutritionists and the U.S. government. These precautions were only based on assumption and observations of other cultures. There have been absolutely no studies that link eating fats, including saturated fats, to heart disease or cancer. There is more evidence of heart disease and cancer being caused by sugars, sucrose and glucose. A type of fat called triglycerides, is three molecules of fat attached to a glycerol backbone. This fat is more harmful than cholesterol. Triglycerides are produced from carbohydrates. People today are dying more frequently or are debilitated by cardiovascular disease and cancer. What’s the cause? When the alarm was sent out that fats may be a cause of heart disease and cancer, Americans reduced their intake of saturated fats and cholesterol. Commercial and packaged goods, and many natural products, were drastically reduced in fats so many foods became low fat or no fat products. The only alternative for Americans was to switch to a high carbohydrate, low fat diet. It’s much easier to overeat carbohydrates and sugar than it is to overeat fats. Carbohydrates are eaten in excess, which of course is obvious in America, since the average consumption of carbohydrates is 70% of the American diet. Sucrose and glucose, which makes up the primary sugars along with high fructose corn syrup, are limited in their ability to convert to glycogen. The remaining carbs that are not converted to glycogen are converted to fats. The fats that are converted from carbohydrates are the same fats we are told to avoid, mainly saturated fats. To some degree, glucose and sucrose can be used for a burst of energy, but the most sustaining level of energy comes from fats. The most damaging effect from carbohydrates is the huge population of overweight and obese Americans who have become intolerant of carbohydrates. While there are three food groups, proteins, fats and carbohydrates, only two of these groups are essential for good health. Proteins are made up of essential amino acids, and fats are made up of essential fatty acids. There are no essential carbohydrates. We can live very healthy and well without eating carbohydrates or, for some people, a minimum of carbohydrates, 20 grams to 80 grams per day. It may seem strange and unusual that people are intolerant of carbohydrates, but nobody seems to find it strange that people are intolerant of gluten, or people who are intolerant of lactose. People who can eat carbohydrates and not gain weight may handle carbohydrates better than others. People who are carbohydrate intolerant, gain weight easily, especially belly fat, have high blood pressure, high cholesterol and are insulin resistant. Today, type 2 diabetes is an epidemic caused by carbohydrate intolerance brought on by the misleading medical advice of avoiding fats and switching to carbohydrates, primarily a grain based diet. Today, many Americans are on prescription drugs only because the diet has changed so drastically in the last 70 to 80 years. Our diet has changed more in this span of time than it had in the previous 2 to 3 million years. If you suffer from high blood pressure, high triglycerides, high cholesterol, high blood sugar level, obesity, or you are at least 10 to 20% overweight, you’ll find most of these conditions will be corrected by a carbohydrate restricted diet. Food truly is your medicine. Drugs are not the answer. Drugs are like putting your finger in the dike rather than restoring and repairing the dike. Change your diet. It will change your life. Don’t adopt these changes for a few months to see all these biomarkers improve significantly and lose all the weight you’ve gained to return to the diet that caused the disorders and the weight gain in the first place. If you’re carbohydrate intolerant, and most Americans are, this should be a permanent change. Are you willing to make the changes and give up what you’re eating to save your life?
